Ingredients
- 3 lbs boneless chicken thighs (skinless)
- 1 tsp Cajun seasoning
- 2 tbsp cooking oil
- 1 cup chopped onion
- ¼ cup chopped celery
- 1/4 tsp black pepper
- 2 tbsp brown sugar
- 2 tbsp all-purpose flour
- 1 tbsp garlic (minced)
- ½ stick unsalted butter
- ½ cup bell pepper (chopped)
- 2 cups chicken broth/stock
Procedure
- On a heavy, deep pot, heat oil and 1 tbsp of butter over medium heat. Season the chicken thighs with black pepper and Cajun seasoning. Sear on both sides and remove. Place the pieces on a plate. Deglaze the pot with water and pour it over the pieces.
- In the same pot, melt 2 tbsp of butter and stir in brown sugar. Once well combined, increase the heat to medium high and put the chicken back to the pot and cook for about 4-5 minutes. Remove the chicken and deglaze the pot using enough water.
- Add the remaining butter to the pot. Add bell pepper, celery and onions and cook over medium heat for around 2-3 minutes. Add the garlic and cook for additional minute. Add flour and stir while cooking. Stir in chicken broth little by little until fully incorporated into the mixture. Once the mixture boils, reduce the heat and simmer for 10 minutes. Add the chicken and simmer over low heat for about 25-30 minutes. Once done, remove the chicken and place it on a plate ready to be served.
